If the 1841 census is correct and ages were rounded down to nearest 5 then Eliz. was 65-69 making her born 1772-1776. The marriage that I found for Edward Edmunds & Eliz. Foster was 1794 making her 18-22 .

They did not necessarily spell it incorrectly (in 1851), just that the census is so faint that you cannot read what was written, and so a 'best guess' is made. Similarly the age can be wrong because not easily read.
Just because Sarah is not there does not mean she is dead. She could quite easily be a servant living with her employers.

But I cannot tell if Joseph is married and if so is it e.g. to Martin's sister, or he is Sarah's brother.
