Fry an onion add stock then drill a hole in the pan et voila... onion and leak soup pml (sorry couldn't resist)

Eating home made chicken and leek soup as I type, Taff.

If you type into google either the type of soup you want, the main ingredient and add soup... orjust soup... you'll get loads....

Soup is so easy to make, just fry an onion, chuck whatever you want in and add stock. I love it :-)

If I make a casserole, and there is some left over... I zap it with the blender thingy, add a little water or stock if necessary, and then either have it as soup for lunch the next day, or put it in the freezer... hubby takes homemade soup in a flask nearly every day to work.

Here's one for you Taff

Moroccan Lamb soup

Onion
chick peas
lamb (neck fillet or chops)
tomatoes
cumin
cinnamon
Turmeric
butter or olive oil to fry
stock
fresh flat parsley
sweet potato (optional)

Fry the onion and add all the spices. Stir for a min or two, it will form a paste. Add the lamb and stir to brown. Add chickpeas (canned ones will do), add water to half fill the pot and stir well, adding the stock. Add chopped tomatoes. Bring to the boil and then simmer with lid on until the meat is almost cooked through. Add the parsley and continue to cook until meat is done.

You may need to top up the water/stock to a consistency you like (some like them runny, others like thick soup).

I sometimes add potato or sweet potato to this soup if I have any at the time.

I haven't put quantities on here as you can use your own judgment as to the size of your pot (and your belly LOL). In general, I use one onion, 3 lamb chops, half can chick peas, 4 toms, 1 sweet potato and 1 tsp of each spice and that will do two meals for me.
