2 half peppers -what can I do with them ?

Made a sweet and sour chicken tonight but now have extra peppers and also bean sprouts , any ideas ?

Hubby's favourite... roasted stuffed peppers... just google it and there are loads of recipes... Jamie Oliver's is lovely...... easy to do, and fabulous!!

Just take out all the innards - the pips and cream coloured bits - bung them in an ovenproof dish - skin side down - slap a bit of olive oil in them and hurl them in the oven. Yummy.

Also, quarter an onion - and shove that in too. Chop a garlic bulb in half and put that in - mushrooms? (I peel them) - they can go in.

Heavenly - and simple.

I hate cooking - if the oven's on - everything goes in the oven - I cook frozen peas in the oven too (need a dish with a lid, no water, knob of butter, bit of sugar, sprig of mint), and tomatoes - chopped into thick slices - bit of butter on each, bit of brown sugar, (breadcrumbs if you have them handy) - oh it's easy!)

Scrummy.

Add quartered onions, courgette (thickly sliced), mushrooms. tomatoes, couple of garlic thingys (smashed), sprinkle with mixed herbs and splashed with olive oil and bake in oven

Slice them up with other veggies and stick them in a stirfry,easy peasy, and you only use one pan.

Oh I wouldn't have had any left, would have chucked the two of them in lol

I love stir fry meals. I also roast peppers etc, but I slice mine and put on tray with anything else, mushrooms, onions etc etc and oliveoil.

You can also slice them and fry them with onion and other veg and use in an omelette, I do that by just adding any amount of beaten egg with a little milk and grated cheese, chopped up left over cooked spuds too and then cook till firm underneath and stick under the grill till the top is firm and crisped a bit, scrumptious.

Last night o.h. came back from shop with lots of sell by bargains, including two pieces of fish in breadcrumbs, so I fried chopped onions, last portion of frozen meditteranean veg from freezer, and frozen chopped mushrooms while the fish was cooking in the oven, I added the veg to a drained pan of wholewheat pasta twirls and served it up with some cheese sauce (found my favourite cheese sauce granules in Sainsbury last week - great when you are in a rush or don't have enough milk) and it made a great dinner, quick and easy and little preparation with all the frozen veg, great standby they are.

We went out for a tapas meal the other night and had stuffed peppers. They were delicious, filled with a minced meat mixture cut side down in the dish and covered with a cheese sauce.
