My low,low version.
On Sunday night I caught the Hugh F-W programme in which he showed three recipes using fresh bread crumbs.
A layer of Caranalised Apples, covered with Double Cream and milk with added bread crumbs and a layer of caramalised bread crumbs on top.
Yes, I thought very nice and very fattening.
So, I set about making my own version with everything as low as possible.
I used an eating apple, to use less sweetener, caramalised them in low-fat spread and low sugar. I left them to cool, and placed them into a couple of ramakins, I then covered them with a small carton of low-fat A*****sia custard. Then I covered them in fresh breadcrumbs, which I had stirred around in the melted low sugar mix I had used to caramalise the apples. I cooked them at 180o for about 30 mins.
Very, very tasty, and I will do again using other fruits.

Thank you for the recipe Julia, sounds delicious, am going to try it tonight, as a diabetic I find the puddings the most difficult to get a good variety.

Sounds lovely Julia...Will try that out for my diabetic mum as her birthday treat next month.

I usually bake everyone a cake for their birthdays and poor mum generally misses out as she's always watching her levels.

I'll let you know how it goes lol x

Jeniwren, I usually end up with a yogurt or piece of fruit, so it is nice to hit on something that doesn't flout all the regulations.
Lady Cutie, I too am diet controlled. I can manage dairy products, what few I eat, but cannot digest real cream, (other illness), and use Elmlea, instead.
Ann, I was hoping you would pick up on this, for your daughter, because i forgot to tell you something when you had your Diabetis thread up.
Please tell her, never to walk around with nothing on her feet. Diabetics often have a 'hard patch' under the soles of their feet, due to poor circulation. If walking in bare or socked feet, you could tread on something, and that becoming infected. Diabetics have a lower healing process.
Perhaps she should see a Chiropodist, as they also do yearly tests on your circulation, also

Thanks all, enjoy.

Daughter thinks she might use this with rhubarb of which she has a glut.

Julia

Julia Report 17 Apr 2012 16:40

Ann, your daughter can send some of that Rhubarb here. I love it, and was given two rots recently which I have planted in very, very large tubs.
Have you read on here, what I said about Chiropody.
Also, she will get a Diabetics Eye Test Yearly, which is not like the one at Sp*c S***rs. It is to see if the Diabetis is getting any worse.

Also, going back to puddings, you know you can make sugar free jelly by infusing one of those fruit flavoured tea bags, and following the instructions on the packet, add some fine leaf Gelatine to make it set. You can also add fruit to it.
