I am putting this up on the thread, because more than me might like to make this

I have been given a pair of squash, and before Merlin comes on and says it, yes they are a right pair.

They look like a couple of UFO's.

Anyway, what I am asking is, do you have a recipe for a favourite soup, for these, possibly including tomatoes.

I made some butternut squash soup last autumn. I don't think I wrote up the recipe though. I'll have a look online.

I don't have a recipe specifically for squash but I think I adapted something like a sweet potato recipe.

we always bake butternut, acorn, spaghetti squash, etc

1 small squash is enough for the 2 of us if we're feeling greedy :-D :-D


wash the squash, cut in half, and remove the seeds etc.

Put a small amount of water in the bottom of a casserole, and place the squash in the water, cut side UP

put a little salt and pepper into the hollow, and about 1 tbsp maple syrup in each half.


Bake for about an hour at 375F, or until flesh is soft.

Cut each half into half again, lengthwise.

Serve as is, and let the diner scrape out the flesh.
