Boiled Orange Cake

I made one today.

Very nice :-D

Has anyone made one?

The 1+1/2 hours of boiling the oranges ~ could that be done in the microwave?

I'll post the recipe if anyone is interested..... no flour, so it may be suitable for those with a gluten intolerance.

here's the recipe ~ sorry it's in Metric!

2 oranges, whole, unpeeled, in saucepan, cover with cold water, bring to boil & boil for 30 minutes with lid on. Discard water. Cover oranges with fresh water, bring to boil and boil a further 60 minutes, with lid on. Discard water. Leave to cool. When cool, remove seeds, put in food processor & pulverise to a pulp.

220grams caster sugar
60grams butter
5 eggs

Beat on high speed with electrix mixer until fluffy & pale.

Fold in:
50grams almond meal
2 teaspoons baking powder

Then fold in the orange pulp.

Grease & line a 20-23cm round pan.

Preheat oven to 160C.

Takes about 45-60 minutes.

I cooked mine in a Halogen oven, 45 minutes wasn't enough... at least 55 minutes.

It's not a cake that rises very much, it's sort of flat:-)

I'm wondering if I could cook the oranges in the microwave until they are soft enough to pulverise...... but would they explode? :-0

Thank you Scozz, I will give it a try. I have put lemons in the Microwave to soften them up, gives more juice.

I am just wondering why the oranges need to be boiled.

Might even have a go at making it with raw oranges. They will eat it if I tell them to!

I make lemonade by putting lemons in the liquidiser and use the rind to make a tart so I might just have a go at a cake by doing it with oranges.

Why do I always have to meddle?

Almond meal is just finely ground up almonds.

If you don't want to use almond meal or can't find it, just grind up some almonds. You don't have to take the skin off, you'll just get a speckled cake.

Version No 2

I weighed 2 oranges, then got the same weight with 1 orange, 1 lemon & 1 lime.

Put the fruit in a pyrex dish, water halfway up the side, put the lid on. Micrwave until the water started boiling, and kept it going for three minutes. Dumped out the water, added more water, repeated the process but boiled for 5 minutes. Fruit nice and soft.

I cheated. Instead of a mixer I put the butter, sugar & 1 egg in the food processor, pulsed it until it came together, then added the eggs one at a time until it looked OK (and wasn't too "sugary"). I only used 4 eggs this time, as the first cake was a bit too soft for my liking.

Added the almond meal & baking powder.

Fruit had cooled off, so I cut it into quarters and dropped it into the food processor. This cake has bits of peel in it.



It's cooking right now.......... I'll let you know if we eat it or feed it to the birds :-D

YuMM!! If you like thing a wee bit on the tart side... try Version 2!

The fruit doesn't go into a pulp, as it would if you had it in the food processor by itself. I like it better with the bits of peel through it.

When OH comes home I'll make him a cuppa, with a piece of each cake, see what he thinks.

This is typical for me....... yesterday I made the cake for the first time (recipe was in the local paper), and as usual I had to fiddle with it.

This one is a keeper, it's going in my recipe book.

Nearly forgot......... Version 2, I cooked it for 55 minutes, in the halogen oven with the top ring on, at 160C; preheated the oven.

As it is a new recipe to you Scozz it will be alright if I have a bit of a play as well then.

I think I might have a go at making it without boiling the orange today.

It will be eaten I can promise you.

Looks like you could use marmalade if didn't have the fresh oranges as well.

Himself came home

His usual BIG cuppa

Two pieces of orange cake........ which he scoffed.

Comments? "This piece has bits in it"

I explained............

He then asked......... "Can you make one with apricots?"

Let me know if you try the marmalade Sharron. Another use for the stuff.......OH refuses to eat it as a "jam"...... but he doesn't know how I make the orange sauce he eats on chicken lol (half an onion, some fresh herbs & about half a cup of marmalade :-D )

One of Marguerite Patten's wartime recipes is for gingerbread.

If you make a gingerbread using whatever recipe you use but leave out the treacle and spices but substitute six tablespoons of marmalade (it's a wartime recipe so you could stick in an extra dollop) it makes a pretty not bad cake but I find it needs eating fairly quickly or it goes mouldy.

Marmalade makes quite a good sponge filling or topping for a steamed one and in bread and butter pudding.

We are quite well supplied with marmalade because I get Fred making it.Juicing the oranges with the food processor and then putting the peel through the slicer. He has been known to pot it as well.

Most of the shop marmalade is awful. I usually make my own, but have been known to buy a French brand (can't remember the name).

I make whisky marmalade.......... a good way to start the day :-D
