Christmas Cake

I used to make all my own cakes and puddings.

But what with wrapping the tin in brown paper, putting greasproof on the top, bunging a skewer in the middle to see if it was done, I lost the will to live!

Now we are a more limited family unit [sounds posh dunnit?] I buy a small bar cake from Marks, and scoff it myself.

Jane, wait until Christmas is over, and W@itrose will be reduce the price of the kits!

We haven't had a fruit based Christmas Cake for several years as it was never eaten on the Day and hung around for ever. Since then we've bought a Panatone (Italian cake) but they've lost interest in that now.
As one of the offspring has an interest in cake making, she might be requested to make a version of a sponge cake - any leftovers would be scoffed by her flat mates!

i gave up on bakeing christmas cake when i stuck a pin in the frill around it
and the pin bent

kids was all there watching so you can just emagion there faceies
and thay woundent even tast it
not even when i told them the pin hit a nut

Nolls ,the first cake is going down a treat lol Just as Worrzel Gummidge (sp) would have said.A nice cup of tea and slice of cake.Our Decorator loves it :-D
If there is anything left of that cake someone suggested breaking it down and making Xmas cake ice-cream .
The second cake seems to have turned out just right, so will be fed it's little doses of Brandy for the next couple of weeks :-D :-D

Maddie…..OH bought all the ingredients for these flipping cakes at Waitro** .I din't know he could buy the whole kit :-S

A tip for those who are lazy cooks.

W@itrose have a Christmas Cake kit.

All the fruit, dry elements, marzipan and icing are in the box. You only have to add eggs and butter.

All for a tenner!

Brilliant :-D :-D.OH has just retired and was feeling a bit lost so I suggested he made the Christmas cake……He has made 2 now in the last 4 days.The first one wasn't quite up to scratch so he had another go………..I now know why I can't get any sense out of him…….. :-D :-D :-D

This is especially for Kitty the Cook, but anyone can join in. It comes highly recommended!

Once again, I’ve had requests for my Brandy Christmas Cake recipe so here goes.
Please keep in your files as I am beginning to get tired of typing this up every year!
(Made mine this morning!!!!)

INGREDIENTS
1 cup sugar,
1 tsp. baking powder,
1 cup water,
1 tsp. salt ,
1 cup brown sugar,
Lemon juice,
4 large eggs,
Nuts,
1 bottle Brandy
2 cups dried fruit.

METHOD
Sample a cup of Brandy to check quality.

Take a large bowl, check the Brandy again to be sure it is of the highest quality then Repeat.

Turn on the electric mixer.
Beat one cup of butter in a large fluffy bowl.
Add 1 teaspoon of sugar.
Beat again.

At this point, it is best to make sure the Brandy is still OK.
Try another cup just in case.

Turn off the mixerer thingy.
Break 2 eegs & add to the bowl & chuck in the cup of dried fruit.
Pick the fruit up off the floor, wash it & put it in the bowl a piece at a time trying to count it.

Mix on the turner. If the fried druit getas stuck in the beaterers, just pry it loose with a drewscriver
Sample the Brandy to test for tonsisticity.

Next, sift 2 cups of salt, or something.
Check the Brandy

Now shift the lemon juice & strain your nuts.
Add one table.
Add a spoon of sugar, or somefink.
Whatever you can find.

Greash the oven.
Turn the cake tin 360 degrees & try not to fall over.
Don't forget to beat off the turner.
Finally, throw the bowl through the window.
Finish the Brandy & wipe the counter with the cat.
