I've been making Welsh cakes all my life using the same ingredients as my mum and grandma (from Swansea). I also have a griddle and much prefer this to a pan. My recipe is simply flour (say 6oz) and half that amount of sugar and butter/margerine and sultanas to taste - a handful or so. Mix the flour/margarine till like breadcrumbs, add sugar, stir in sultanas then use a little water or milk to mix to a thick dough. Roll out, cut in rounds about 1/2 inch think and put on warmed and greased griddle, turning once, till brown on both sides. We don't shake sugar on them but its down to taste nor do we use an egg to mix, just milk or water. Best eaten warm but they're nice cold in lunchboxes! Angela

Julie do you know where I could buy a bakestone? I have been searching the shops but I cannot see one. What sort of frying pan are you using?

jules you made me laugh then they are usually called drop scones i think, they are flat/1/2 inch thick, round, cooked on stove on top of a thick stone type grill,or fryin pan, ( as a bake stone is too heavy for me to lift) made with flour butter/marg, sugar milk and an egg oh and some sultanas or raisins ccok on both sides till brown and sprinkle with sugar mmmmmmmmm lovely warmish
