Although I am not a vegetarian, my wife has been for over 60 years. Would anyone like to post some unusual vegetarian recipes? D |

Celery Steaks Cut a celeriac into steak size slices. Steam or microwave until almost soft. Plae in an oven proof dish and cover with a tomato sauce, either homemade or from a jar. Add some herbes de Provence, and season to taste. Sprinkle with sesame seeds, sunflower seeds or pine kernals, and then with grated cheese. Bake untill cheese is brown. (180-200 degs) D |

Easy one comming up. One aubergine, two large courgettes, one onion chopped into small bits. Coat with olive oil and roast on 200c for about 20min till well roasted. Stir in quorn pieces which have been defrosted and a small jar of pasta sauce ie Salca's olive and tomato. You can use tofu which has been marinating in soya and chilli sauce instead of quorn. Cook for a further 10 mins or so. Makes enough for 4 meals. I serve straight on to baby spinach. The heat of the sauce wilts the spinach. Mmmmm. I roast most of my veg. including cauliflower etc. |

Does it have a name Jeanie? My wife doesn't like Quorn or Tofu. BAYALDI Fry some onions quickly and spread them on the base of an oven proof dish. Slice aubergines, courgettes and tomatoes and place them in overlapping lines on the onions. Sprinkle with a little Thyme, and some powerded bay leaves (Available from Mackenade Fine Foods Faversham if you can't find them elsewhere.) Season and sprinkle with olive oil and bake @ 180 deg till it looks done. D |

Hi Dave, no name, though its a sort of oven ratatouille. I like to roast because the veg. stayes firmer than when cooked on top of stove. You can use a tin of cannoline, spelling!!, beans instead of quorn or tofu. |

Good one Ann, excellent suggestion. I do think that after being a vegetarian for 60 years, Dave's wife may know how to make omeletts unless like myself she does not eat eggs. I think the reason for this post is for unusual or favourite receipes. Yes we can Google for most things- half the questions on the tips board would not be needed if people used the search facility but its all about sharing thoughts and ideas. |

If you buy a packet of Whitworths Soup & Broth mix, there is a recipe on the side for Minestrone Soup, you can leave the bacon bits out (I do), veryfilling and tasty. Val |

Jeannie Have you tried your baked rattatoille with yellow Veg. Yellow Toms, Yellow courgettes Yellow Aubergnes, yellow peppers. It makes an interesting change. Our farm shop does all these in the summer. D |

My Fav vegetable has got to be Parsnip. It's ooo tasty, especially when it's honey roasted. I love my vegetables crunchy. I cant stand them when people boil them YUCK! |
