Im makin my daughters birthday cake this year & am going to be lazy & use ready made icing for the top of the cake.Whats the best was to put this over the cake & make it stay on???

Well it's a while since I have done any cakes but would suggest brushing the cake with a light mixture of apricot jam thinned down with water (heat them together) and strain then roll out the icing to larger than size required then take rollingpin and roll icing over it, lift and lay on top of cake.........am I making sense here?? hope I'm right with this

apricot jam or marmalade...the colour won't show through the icing.

ps, to make the icing nice and level, sprinkle a little icing sugar on it once it is on the cake, then with your hand, run in wide circles until the sugar is rubbed into the icing. It will also make it shine a little.

If you are making a sponge cake, I suggest you use buttercream icing (margarine/butter, plus icing sugar & a little milk) smooth a thin layer over the cake, roll out the icing on a little icing sugar & using the rolling pin to lift it carefully place on the center of the cake. Use a cake smoother to smooth out any air bubbles & use the side of your hand to ease the icing around the bottom of the cake.

You need to work quickly to prevent the icing dryng out & cracking.
Apricot jam is more suited to covering a fruit cake.

Stray, strawberry will show through the icing, and make it lumpy with the strawberries in it lol
