How are you today?

BARA BRITH (Speckled Bread)

Ingredients:

22mls Strong Tea, Strained
400g Mixed Dried Fruit
150g Light Muscovado Sugar
1 Orange, Zest Only
100g Unsalted Butter, melted and cooled
1 Large Egg, beaten
300g Self-Raising Flour
2tsps Ground Mixed Spice
15 Sugar Cubes, roughly cut

Method:
1. Place the TEA and DRIED FRUIT in a mixing bowl. Cover and leave to soak overnight.
2. Preheat the oven to 170 C. / 150 C Fan / Gas 3.
3. Grease and Line a 1.2 litre non-stick loaf tin with non-stick baking parchment.
4. Add the SUGAR to the DRIED FRUIT MIX and stir well. Add the ORANGE ZEST, BUTTER and BEATEN EGG and stir together.
5. Sieve the FLOUR and MIXED SPICE into the bowl and stir everything well.
6. Spoon the MIXTURE into the loaf tin. Scatter over the roughly cut SUGAR CUBES
7. BAKE for 1 HOUR 15 MINUTES or until a skewer inserted into the centre comes out clean. Leave to cool completely in the baking tin.
8. Serve sliced and buttered.
