I think you'll need a bit more info than that. How did you work back to him?
You can try http://www.irishgenealogy.ie/en/ ( for baptisms)
or familysearch

but getting back that far on Irish records is an achievement in itself :-D

"In the 1700's" covers 100 years - too vague.

FamilySearch shows several Michael Sullivans born in that century, but we'd need more information to know if any of them is the one you're looking for.

Please tell us everything you know about him. Wife's name? Children? Where did he live - Cork, or somewhere else?

Can you post (copy & paste) any of the records you have found, please?
Have you found the info on people's trees (which is far from foolproof), or in actual records?

On Ancestry, the nearest I can find is a Michael "Big Mick" Sullivan mentioned in a couple of trees as born 1791 in Clonmel, Tipperary (no source given).
Father John Sullivan, but mother Lois (or Kitty) Russell.
Married Hanora (Honora??) Hogan, had several children, died 1862 in Peterborough County, Douro, Ontario.

But no mention of a Bridget Morrissey.

EDIT:
Oh yes, another tree says Mick married Bridget Morrissey - I though you meant that John had married Bridget.
According to that tree, he married Bridget (1793 Tipperary - 1868 New Jersey) in Peterborough, Ontario.

Still no source or proof given.

It also mentions another wife, Ellen McCoy.

There are records for lots of Michael Sullivans born in Tipperary about 1791, (EDIT: Well, no, actually, they're in Cork!) but none specifically in Clonmel. These are the only ones I can see with father John (but I have no idea if either of them is him or not):

As you have an Ancestry sub, why not try contacting the owners of the trees which have Big Mick on them?

They haven't put any mention of sources for their information on Ancestry, but perhaps they may have some.
