School dinner recipe caramel cake 1970's/80's

If anyone is interested, I have a 1968 Staffordshire County Council School Dinners recipe book (thanks to my auntie) and it has lots of the old favourites in it. The only trouble is that the quantities are for 100 portions each time!

I think the caramel pud was actually what they described as "butterscotch".

It has cheese pie in it too. It's late, so I can post recipes tomorrow, if anyone wants a recipe leave a reply.

Reading the recipe, I assume this is the nearest. A cheese and onion flan.

The cheese and potato pie has no onion or tomato, just mashed potatoes mixed with milk, margarine,cheese, eggs, mustard and seasoning.

Remember it's for 100 portions!!

6 lbs pastry
used to line tins.

Make a roux with
10 oz/ margarine + 10oz flour + 6 pints milk, cook through.
Par-boil 1 1/2 lbs minced onions.
Add6 lbs grated cheese to the sauce and the onions. Pour into prepared tins, srinkle with 3 lbs grated cheese and bake in moderate oven until set.When partly cooked, garnish with sliced tomatoes.

I also am a school cook and have a lot of recipes .there is a new lot coming out in september so .I have a lot more to learn

I mentioned it to my aunt yesterday and she gave me her old book, for years she worked in Staffordshire County's canteen. It's full of interesting recipes.

CARAMEL CAKE.

5oz self-raising flour,
1 tablespoonful Caramel Syrup.
2 Eggs and their weight in Butter and Sugar.

(Caramel Syrup) Melt one and a half ozs of Demerara sugar in a strong smooth saucepan, and continue melting until it turns a medium brown,taking care not to burn it .
Then add a 1/4 pint boiling water gradually.
Stir until the Caramel has dissolved, then add 3 ozs more demerara sugar and cook until it is the consistency of thin syrup. (cool before using ).
The rest can be stored for future use.

RECIPE- Prepare by the creaming method. Put into a lined sandwich tin and bake for 40 minutes in a moderate oven.Mark 4 or 380 Fahr Middle shelf.

Maz,

It mentions cheesey Scotch eggs but doesn't say what to do with the cheese! Do you mix it with the sausagemeat?

Apparently "Mock cream" is good. It's an unsweetened blancmange made with dried milk, water and cornflour, left to cool and gradually whisk in (sugar and margarine that has been creamed together).

no the eggs are boiled and peeled as normal
the mix is cheese, breadcrumbs, onions and egg to bind which is wrapped round the egg and fried or cooked in the oven i was looking for the recipe its an old one but is a really good one the kids never ate them but the staff did

Baked cheese puffs?

For 100 portions!

6 lb flour
24 eggs
salt, mustard, seasoning
12 pints milk
4 lb grated cheddar cheese

Make the batter as for Yorkshire pudding.
Allow to stand, mix in grated cheese.
Pour into patty tins or shallow baking tins containing hot fat.
Bake in a hot oven for 20 minutes.
