Agree its much better made the day before. In the restaurant we used to make it with a very thin layer of runny bechamel on the top. then let it sit overnight in the fridge, cut it into portions and freeze. To use a portion it went into a dish with a topping of thick bechamel, slackened off with yoghurt and maybe an egg, with cheese mixed in and sprinkled on the top. Sometimes just yoghurt and egg. Yummy. OC
