Hi Sylvia,

All well here.

Still raining here too! The nights are really cold so we have ben having lots of pasta and rice dishes for dinner. We have some friends coming for lunch this weekend, I think I will be cooking a roast (it's that kind of weather expected!)

Have been trying to think of a desert to make, one of the guests is lactose intollerant so nothing with dairy in it (kind of limits my imagination a bit!)

as a lactose-intolerant person, maybe I could help?


you can buy a Soya Dessert, which is like a very smooth icecream .... so you could serve a fruit dessert with ice cream for everyone else. Although we have had people rave about how good the Soy Dessert tastes!


you can replace butter in recipes with margarine

you can replace milk in most recipes with either soy milk + water (about 60:40 or 50:50 parts), or rice milk


when you heat soy milk it sort of coagulates and thickens, hence mixing it with water.



Just make sure to read the ingredients on any bought items to make sure that there is no "lactose" or "dairy" listed on the list ........ it's surprising where it turns up!

I'll have a think and see what I can do.

Must be hard to have that kind of dietery restriction. Two of my neices are celiacs so that is hard from them and another is fructose intolerant!

actually, I've found lactose intolerance has got easier to deal with in the last 5 years. I developed it in 2004/5 ...... until then I was perfectly normal!

But it is far easier to deal with, in eating out, buying things at the supermarket, etc than, for example, wheat or gluten intolerance.

I drink soy lattes ....... can't drink coffee black, and soy just curdles and tastes funny if you pour it into hot coffee. But it isn't bad when frothed, and you can sprinkle cinnamon over the top to further mask the taste!

5 years ago, it was difficult to find a coffee shop that either had soy milk, or always had soy milk. Starbucks was one of the few ...... and I don't really like Starbucks coffee.

Now, it is the very rare coffee shop that doesn't have soy



The one thing I really really miss is good cheese!


There are soy cheeses, but they taste awful!

Breakfast is ready


Tea, coffee, juices

Cold Cereals:-
Corned Flakes, Raisin Bran, Cocoa Pops, Shredded Wheat, Rice Crispies, Alpen, Multigrain Cheerios, Frosted Flakes

Hot Cereals:-
Porridge, Cream of Wheat, Quick Quaker Oats


In the warmers:-
bacon, turkey sausage, breakfast sausage, omelette, grilled tomatoes, grilled mushrooms, fried bread, black pudding, French toast


Toast, bagels, Danish pastries, croissants


Selection of jams, jellies, marmalades, Marmite, vegemite

Think I'll go the porridge today!

I was going to do a fruit & cheese platter then I thought, nope can't really do that!

The first time I ever tried starbucks was in Las Vegas and i loved it! The coffee was really nice, I remember saying to partner, how can a business survive just selling coffee, and I marvelled at the fact people drove there to get one!

Now of course coffee is so poular everywhere and there are coffee shops in every location!

oooh ja...x that is SO frustrating for you! I hate it when that sort of thing happens because you get yourself all worked.....and then you are let down. Let's hope she makes it next week. I wonder if they are going to do some physio with you and see what you need around the house?

HID has gone to the job centre so it would have been ideal for them to come today

That's true. I used to try and keep my mum from catching things because she could be 'floored' so easily.

What happened to the kitchen fitting job or have I missed summat?
